Understanding the Nutritional Value of Beet Juice

Beet juice contains a variety of nutrients that make it a notable addition to a regular diet. One medium-sized beet (about 100 grams) provides approximately 43 calories, 1.7 grams of protein, 10 grams of carbohydrates, and 2.4 grams of fiber. Beets are particularly known for their betalain pigments, which give them their deep red and purple colors. These compounds have been studied for their antioxidant properties.

Fresh beet juice also contains significant amounts of folate, with one cup of raw beet juice providing roughly 136 micrograms—about 34 percent of the daily recommended value for adults. Manganese, another mineral found in beets, supports bone health and metabolism. A single serving of beet juice also delivers potassium, which plays a role in heart function and blood pressure regulation. Studies published in nutrition journals have documented that the nitrates naturally present in beets may contribute to circulation and oxygen utilization in the body.

The juice retains most of these nutrients from the whole vegetable, though the fiber content decreases significantly during the juicing process since fiber remains largely in the pulp. When you remove the skin and fiber, you concentrate the sugars and other dissolved compounds in the liquid. One cup of fresh beet juice contains about 12 grams of natural sugars, so portion control matters for people monitoring sugar intake.

Practical takeaway: Before making beet juice at home, consider your nutritional goals. If you want maximum fiber, eating whole beets or adding the pulp back into the juice serves this purpose better. If you're interested in the nitrates and minerals, fresh juice offers a concentrated source. Keep in mind that one serving of beet juice should be about 3 to 4 ounces due to its nutrient density and sugar content.

Selecting and Preparing Fresh Beets for Juicing

Choosing the right beets makes a significant difference in the quality and taste of your homemade juice. When shopping for beets, look for firm vegetables without soft spots, bruises, or visible decay. Medium-sized beets (about 2 to 3 inches in diameter) tend to be more tender and less woody than very large specimens. Fresh beets typically have earthy, slightly sweet smell. Smaller beets often have milder, less earthy flavors compared to larger ones.

The greens attached to the beet roots indicate freshness—they should be vibrant and not wilted, though the greens themselves are optional for juicing (though they can be reserved for salads or cooking). Beets are available year-round in most grocery stores, but they're most abundant and affordable from June through October. You'll find varieties including red beets (the most common), golden beets (which taste slightly sweeter and won't stain as much), and candy-striped beets (which have concentric rings of red and white).

Before juicing, scrub the beets under running water with a vegetable brush to remove soil and debris. You don't necessarily need to peel raw beets before juicing—the skin is edible and contains nutrients. However, some people prefer removing the skin for a milder taste. If you choose to peel, you can do this before or after juicing. When working with red beets, wear an apron or gloves, as the juice stains skin and clothing noticeably. The pigment is water-soluble but can be stubborn on fabric.

Practical takeaway: Buy 2 to 3 pounds of beets to yield approximately 8 to 12 ounces of juice, depending on water content. Store unwashed beets in a sealed container in your refrigerator's vegetable drawer—they'll stay fresh for up to two weeks. Wash beets just before juicing to prevent moisture loss and spoilage.

Choosing and Using Different Juicing Equipment

Several types of juicers can process beets, each with different advantages. Centrifugal juicers spin at high speeds to separate juice from pulp. They're fast (typically taking 30 to 60 seconds per batch) and less expensive than other options, ranging from $50 to $150. However, centrifugal juicers generate heat that may break down some heat-sensitive nutrients, and they don't extract as much juice from leafy vegetables or soft fruits. The noise level is typically 80 to 90 decibels.

Cold-press (masticating) juicers use a grinding and pressing action that operates at lower speeds, preserving more nutrients and producing juice with a longer shelf life. These machines can extract approximately 20 to 30 percent more juice from the same amount of produce compared to centrifugal models. They typically cost between $200 and $600, operate more quietly (around 60 to 70 decibels), and work effectively with both hard vegetables and soft produce. The tradeoff is that cold-press juicing takes 5 to 10 minutes per batch.

For those on a budget, a food processor combined with a fine-mesh strainer or cheesecloth can produce beet juice without specialized equipment. Blend chopped beets with a small amount of water, then strain through cheesecloth or a strainer to separate liquid from pulp. This manual method takes more time and physical effort but costs nothing if you already own a blender.

If you own a high-powered blender like a Vitamix or Ninja, you can make beet juice by blending beets with water and straining the liquid. Blenders excel at creating smooth, drinkable consistency and work for small batches. They don't separate pulp and juice as efficiently as dedicated juicers, so the resulting beverage will be thicker.

Practical takeaway: If you plan to juice several times per week, invest in a dedicated juicer. Centrifugal models suit people who prioritize speed and lower cost. Cold-press models suit those interested in nutrient preservation and juice shelf life. If juicing occasionally (monthly or less), a blender with straining works adequately for beet juice.

Making Fresh Beet Juice Step-by-Step

Start by preparing your workspace and equipment. Wash your juicer's components and have a large glass or container ready to catch the juice. If you're concerned about staining, place towels under your work area. Trim the beet stems and roots with a knife, leaving about half an inch of stem. If you haven't already washed the beets, do this under running water with a brush. Peel the beets with a vegetable peeler or knife if you prefer, though peeling is optional.

Cut the beets into chunks roughly 2 to 3 inches in size. This sizing works well for most juicers. Some centrifugal juicers require smaller pieces, so check your equipment's manual for specific recommendations. If your juicer has different chutes or openings, make sure your beet pieces fit comfortably without forcing them, which can damage the machine or create safety hazards.

Feed the beet pieces into your juicer according to the manufacturer's instructions. With centrifugal juicers, push pieces down gently using the provided plunger—never insert your fingers into the chute. With cold-press juicers, feed pieces slowly and let the machine pull them through. The juice will flow into your container, and the pulp will be discharged into a separate compartment. Depending on your beet quantity and juicer type, this process takes 3 to 15 minutes.

Once juicing is complete, drink the juice immediately or store it properly. Fresh beet juice oxidizes relatively quickly. If consuming the juice within 24 hours, store it in a sealed glass container in your refrigerator. For longer storage (up to 3 days), use airtight glass jars away from light. Some people freeze beet juice in ice cube trays for storage up to 3 months, then thaw and consume as needed.

Practical takeaway: Make only the amount of juice you'll drink within 24 hours if possible, since nutrient content and flavor decline with time. A typical 1-pound bunch of beets yields 6 to 8 ounces of juice. If the juice tastes too earthy or strong, dilute it with water, apple juice, or orange juice when serving.
